Single-field vintage releases and slow brick-oven cooking define the terroir-driven philosophy of Tequila Ocho Plata. Created by fifth-generation agronomist Carlos Camarena alongside the late Tomas Estes, Ocho operates like a traditional wine estate by harvesting 100% Blue Weber agave exclusively from designated single fields (ranchos) across the Los Altos highlands of Jalisco. The mature piñas undergo slow roasting in traditional masonry ovens, roller-mill extraction, and open-vat wooden fermentation with indigenous yeasts before double distillation in small copper pot stills. Bottled unaged at 40% ABV without additives, chill filtration, or artificial sweetening agents, it serves as a pure structural benchmark for highland agave spirits.

Viscous and substantial in mouthfeel, the palate leads with dense, sweet roasted agave, lime zest, and wet slate minerality. Mid-palate tension introduces fresh-cut lemongrass, savory vegetal green pepper, and crisp white pepper warmth that elongates the finish without excessive heat. In-house evaluations at USQ show the spirit's dense lipid texture holds exceptional clarity neat, while possessing the structural spine required for refined cocktail builds.
